Rice Salad with Shrimp & Avocado

Ingredients

  • Shrimp
  • Rice
  • Romaine lettuce
  • Cabot cheddar cheese, shredded
  • 1 lime
  • 1 clove garlic, crushed
  • 1 avocado, peeled and thinly sliced

Directions

  1. In a small bowl, combine shrimp, lime juice, and garlic.
  2. Marinate for 30 minutes.
  3. Place rice in a large bowl. Add shrimp mixture and toss to combine. Add lettuce.
  4. Tope with avocado and cheddar cheese.
