Chicken Broccoli Zoodles

My new vegetable spiralizer  is being put to work – It’s one of my favorite kitchen gadgets! This meal is so quick & easy. Check out the recipe below.


  • 1⁄4 cup olive oil
  • 6 cloves garlic, minced
  • 4 boneless, skinless chicken breasts, cubed
  • 4 cups broccoli, cut into bite-size
  • 1 1⁄2 cups low sodium chicken broth
  • 6 ounces mozzarella pearls
  • Parmesan cheese, grated
  • 1large zucchini, spiralized
  • Salt & pepper


  1. Start by spriralizing the zucchini using the thickest noodle blade your spiralizer has.
  2. Heat the olive oil in a large pan. Add the garlic and cook for about 3-4 minutes.
  3. Place the diced chicken into the pan and season with salt and pepper. Simmer for about 5 minutes.
  4. Add the stock and simmer for a further 5-10 minutes.
  5. Add the broccoli and cook for another two minutes. Then add the spiralized zucchini and toss gently. Add the mozzarella.
  6. Garnish with freshly grated Parmesan cheese.
