Greek Quinoa & Avocado Salad

Ingredients

  • 1/2 cup uncooked quinoa
  • 1 cup water
  • 2 roma tomatoes, chopped
  • 2 cups mixed greens
  • 1/3 cup red onion, chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 2 avocados, sliced
  • 1/3 cup crumbled feta cheese

Directions

  1. In a saucepan combine quinoa and water. Bring to boiling; reduce heat. Simmer, covered, about 15 minutes or until liquid is absorbed.
  2. Transfer quinoa to a medium bowl. Add tomato, spinach, and onion; stir to combine. In a small bowl, whisk together lemon juice, oil, and salt. Add to quinoa mixture.
  3. Place mixed greens on a plate.Spoon quinoa mixture over avocado slice. Arrange avocado slices on quinoa mixture. Top with feta cheese.
