Asian Chicken Lettuce Wraps

Ingredients

  • 2 pound ground chicken
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow onion, chopped
  • 1/2 cup hoisin sauce
  • 2 tablespoon soy sauce
  • 1 8 ounce can sliced water chestnuts
  • 1 1/2 cups cooked brown rice
  • 3 green onions, sliced
  • 1 tablespoon rice vinegar
  • 1 1/2 teaspoon sesame oil
  • 2 heads romaine lettuce
  • Salt & pepper

Directions

  1. Add ground chicken, bell pepper, onion, hoisin sauce, soy sauce, salt and pepper to crock-pot. Cover and cook on low heat 2-3 hours until chicken is tender.
  2. Stir in water chestnuts, cooked rice, green onions, rice vinegar, and sesame oil, and cook until heated through 3 – 5 minutes.
  3. Separate romaine lettuce and serve with chicken filling.
