Ingredients
For the Sauce
- 6 ounce tomato paste
- 6 ounce water
- 1 teaspoon minced garlic
- 1 teaspoon basil
- 1 teaspoon oregano
- ½ teaspoon onion powder
For the Pizza
- 2 cups uncooked frozen cauliflower
- 2 cups part-skim, shredded Mozzarella cheese
- 1 egg
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- ½ cup turkey pepperoni
- ½ cup spinach
Directions
- Mix all sauce ingredients in a medium size bowl using a whisk or spoon. Refrigerate sauce for 10-15 minutes before using to allow ingredients to blend.
- Preheat oven to 450 degrees.
- While sauce is in the fridge, microwave cauliflower for 8-10 minutes until cooked through.
- Place cauliflower in a food processor and pulse until it is like the consistency of rice.
- Squeeze out the cauliflower liquid as much as you can. The cauliflower should be dry.
- Transfer cauliflower to a bowl, add 1 cup of Mozzarella and one egg — mix well.
- Add oregano, basil, garlic powder, salt and pepper to cauliflower and cheese mixture.
- Place a piece of parchment paper onto a baking sheet.
- Heavily coat parchment paper with nonstick cooking spray.
- Spread cauliflower onto parchment paper. Make sure to spread the cauliflower mixture as thin as possible.
- Bake in the oven for 20-22 minutes until the dough is golden brown and bubbly.
- Remove crust from the oven and turn oven onto Broil.
- Spread sauce over crust, sprinkle 1 cup of remaining Mozzarella cheese over pizza top, cover with turkey pepperoni and spinach.
- Place baking sheet back in the oven under the broiler and broil for 3-5 minutes.
