- 2 avocados
- 1 lime
- 1 teaspoon salt
- 1 jalapeno chili, minced
- ½ red onion, finely diced
- 2 medium sized carrots, grated
- Peel the avocado and place in a mixing bowl, add the salt, cut the lime, squeeze in the lime juice, and mix until relatively smooth.
- Mix in the chopped jalapeno, onion, grated carrots and mix well.
