Tangy Sesame Cucumber Salad

Ingredients

  • 2 large cucumbers, thinly sliced
  • 2 tablespoons sesame seeds
  • ¼ cup chopped peanuts

Dressing

  • 2 tablespoons apple cider vinegar
  • 1 tablespoon water
  • ½ tablespoons sesame oil
  • 1 teaspoon honey
  • ¼ teaspoon red pepper flakes

Directions

  1. In a small bowl, whisk the dressing ingredients. Refrigerate until serving.
  2. Place all the remaining ingredients in a large bowl.
  3. Just before serving add in the dressing and toss gently to combine.
