- Brown Rice
- 2 cups spinach, chopped
- ½ cup chickpeas, drained and rinsed
- ½ cup cucumbers, diced
- ½ cup tomatoes, diced
- ½ lemon, juiced
- 2 tablespoons hummus
- Optional: Lettuce, feta cheese, kalamata olives, etc.
- Cook brown rice according to package directions.
- Add spinach to a bowl or a lunch container. Top with rice, chickpeas, cucumbers, tomatoes, lemon juice, hummus, and additional toppings.
